This colorful side features lightly steamed squash seasoned with Parmesan cheese and bright Italian spices. It’s extremely low in carbs and makes a wonderful accompaniment to any protein.
11⁄2 cups sliced zucchini
11⁄2 cups sliced yellow squash
21⁄2 tbsp butter, melted
1⁄2 tbsp Italian seasoning blend
1⁄2 tsp fine grind sea salt
1⁄4 tsp ground black pepper
2 tbsp grated Parmesan cheese
1 Place a steamer basket with legs in the inner pot and add 11⁄2 cups water to the bottom of the pot. Add the zucchini and yellow squash to the basket.
2 Cover, lock the lid, and flip the steam release handle to the sealing position. Select Steam (High) and set the cook time for 2 minutes. When the cook time is complete, quick release the pressure.
3 Open the lid and transfer the zucchini and squash to a large bowl.
4 Add the melted butter, Italian seasoning, sea salt, black pepper, and Parmesan cheese to the bowl. Toss to coat the zucchini and squash in the butter and spices.
5 Transfer the squash medley to serving plates. Serve hot.
tip If you don’t have a steamer basket with legs, you can use an ovenproof bowl placed on top of the steam rack.
