This drink is a Spanish afternoon in a glass—deliciously citrusy, nutty, and fragrant. The gin is infused with rosemary for a hint of herbal flavor. This cocktail works particularly well with Gin Mare, a gin that also takes its inspiration from the sunny Mediterranean.
You’ll need a few hours of preparation to infuse the gin.
1. Pour 1 fl oz (30ml) rosemary-infused gin, 1 fl oz (30ml) lemon juice, and 1/2 fl oz (15ml) orgeat into a shaker.
2. Add ice and shake thoroughly for 15 seconds.
3. Strain into a wine glass filled with ice.
4. Top with Cava.
