After picking Funnel in the Visualization Type, you can select the Step column name (which defines the steps within the funnel), which is where you can set a custom display name for that column.

You can select the Funnel Value Column Name (which holds the value for each step), and set a custom name for that column as well.

All the other options are calculated by Redash (such as the percentage of total and percentage of previous step):
