Spanish Rice Taquitos

Flavorful whole grain rice is tucked into corn tortillas and then air fried. For an even bigger flavor boost, add some fresh cilantro or a thinly sliced red onion.

1 cup cooked brown rice, warmed

1 packet Sazón Goya seasoning

½ cup frozen green peas

12 medium corn tortillas

1 red bell pepper, sliced into 12 strips

1. Set the air fryer temp to 340°F. Spray the fryer basket with nonstick canola oil.

2. In a small bowl, combine the brown rice, seasoning, and peas. Mix well.

3. Spread 2 tablespoons of the rice mixture in the center of each tortilla. Add a bell pepper strip to each tortilla. Roll up the tortillas, tucking the edges under to seal.

4. Working in batches, place 6 tortillas in the fryer basket and cook until golden brown, about 3 to 4 minutes.

5. Transfer the taquitos to a platter and serve immediately with the guacamole.
