Charred Corn Salsa

2 cups frozen corn kernels

½ cup finely chopped bell pepper (any color)

½ cup finely chopped red onion

1 garlic clove, finely chopped

1 tbsp olive oil

1 tsp kosher salt

3 tbsp chopped pickled jalapeños

½ cup roughly chopped fresh cilantro

tortilla chips

1. Set the air fryer temp to 400°F.

2. In a medium bowl, combine the corn, bell pepper, onion, garlic, olive oil, and salt.

3. Place the mixture in the fryer basket and cook until the veggies begin to char, about 6 to 8 minutes.

4. Transfer the salsa to a large bowl and mix in the jalapeños and cilantro. Serve immediately with the tortilla chips.

TIP For a creamier version, mix in some diced avocado.

TIP If you’re concerned about small cut pieces falling through the basket, use a baking dish and stir the veggies once or twice during cooking.
