Olive & Refried Bean Taquitos

Enjoy this spin on a fried taco by using cook-quality vegan canned refried beans. Make this recipe gluten-free by using corn tortillas.

6oz (170g) pitted black olives, sliced

juice of ½ lime

1 tsp ground cumin

15oz (420g) vegetarian refried beans (Trader Joe’s recommended)

12 small flour tortillas, warmed

guacamole (optional)

1. Set the air fryer temp to 340°F.

2. In a small bowl, combine the olives, lime juice, and cumin.

3. Place 2 tablespoons of refried beans in the center of each tortilla. Sprinkle some of the olive mixture over the top. Roll up each tortilla, tucking the edges under the bottom to seal.Spray the tortillas with nonstick canola oil.

4. Working in batches, place 6 taquitos in the fryer basket and cook until golden brown, about 4 to 5 minutes.

5. Transfer the taquitos to a platter. Serve immediately with the guacamole (if using).

TIP For a quick and easy guacamole, mash together 2 ripe avocados, the juice of 1 lime, a pinch of kosher salt, and 3 dashes of hot sauce.

TIP To make the tortillas easy to roll, warm them ahead of time.
