Crispy Garlic Chickpeas

Nothing fights an afternoon energy slump like this munchable high-protein snack. They’re also a healthier replacement for croutons on a salad.

MAKES 6 servings • SERVING SIZE 1 serving

15oz (420g) canned chickpeas, drained and rinsed

1 tbsp olive oil

1 tsp kosher salt

1 tsp freshly ground black pepper

½ tsp garlic powder

½ tsp dried thyme leaves

1. Set the air fryer temp to 390°F.

2. In a medium bowl, combine the chickpeas, olive oil, salt, pepper, and garlic powder. Toss well to coat.

3. Place the chickpeas in the fryer basket and cook until crisped or as desired, about 13 to 15 minutes. Pause the machine 2 or 3 times to shake the basket.

4. Transfer the chickpeas to a serving bowl. Add the thyme and toss well to coat. Allow the chickpeas to cool before serving.

TIP Store the chickpeas in an airtight container for up to 5 days.

TIP For a sweet take, toss the chickpeas with 1 tablespoon of olive oil, ½ teaspoon of ground cinnamon, and 2 teaspoons of light brown sugar.

TIP For extra flavor, season with fresh lemon zest before serving.
