Balsamic Mushroom Burgers

These low-calorie burgers are just as juicy and scrumptious as their meaty counterparts. Hummus adds flavor and protein to this plant-based meal.

3 tbsp balsamic vinegar

1 tbsp reduced-sodium soy sauce

1 tsp Dijon mustard

2 garlic cloves, minced

4 portobello mushroom caps, stems removed and gills scooped out

4 vegan hamburger buns, toasted

½ cup hummus

1 red onion, sliced

1 avocado, sliced

butter or green leaf lettuce

1. In a large bowl, whisk together the balsamic vinegar, soy sauce, mustard, and garlic. Brush the mushrooms with the sauce and allow to marinate for 10 minutes.

2. Set the air fryer temp to 400°F.

3. Place the mushrooms in the fryer basket and cook until hot and slighly charred at the edges, about 8 minutes, turning once halfway through. Allow to cool in the fryer basket for 2 to 3 minutes.

4. Slather the buns with the hummus and fill with an equal amount of the mushrooms, onion, avocado, and lettuce. Serve immediately.
