8oz (225g) bowtie pasta (makes 4 cups cooked)
2 cups roasted vegetables
1 cup marinara sauce
⅓ cup shredded vegan mozzarella-style cheese (Daiya recommended)
½ tsp dried oregano
1. Set the air fryer temp to 370°F.
2. Cook the pasta according to the package directions. Drain well.
3. In a large bowl, combine the pasta, roasted vegetables, and marinara sauce. Place the pasta mixture in a 7-inch (17.5cm) springform pan. Sprinkle the mozzarella and oregano over the top.
4. Place the pan in the fryer basket and cook until the mozzarella has melted and the edges are crispy, about 6 to 8 minutes.
5. Remove the pan from the fryer basket and allow the pasta bake to cool slightly before serving.
TIP Roast vegetables such as broccoli, mushrooms, onion, eggplant, and zucchini in your air fryer. Place the vegetables in a large bowl, drizzle with a little olive oil, and sprinkle with a little kosher salt. Toss well to coat. Place the vegetables in the fryer basket and roast for 5 to 8 minutes.
