with Whole Grain Croutons
This easy everyday salad feels extra special topped with air-fried croutons. Apples, spinach, and walnuts have plenty of anti-inflammatory properties.

2 cups cubed whole grain bread
2 tsp olive oil
8 cups baby spinach
1 medium Gala apple, chopped
15oz (420g) canned chickpeas, rinsed and drained
½ cup toasted walnuts
½ cup favorite salad dressing
1. Set the air fryer temp to 390°F.
2. Place the bread in a large bowl and drizzle with the olive oil.
3. Place the cubes in the fryer basket and cook until toasted, about 2 to 3 minutes.
4. Transfer the croutons to a platter and allow to cool slightly. In a large bowl, combine the spinach, apple, chickpeas, and walnuts. Top with the croutons and dressing. Toss well to coat.
5. Divide the salad into 4 bowls before serving.
TIP For a quick dressing, whisk together ¼ cup of extra virgin olive oil, 2 tablespoons of balsamic vinegar, 2 teaspoons of Dijon mustard, 2 teaspoons of maple syrup, 1 garlic clove minced, ¼ teaspoon of kosher salt, and ⅛ teaspoon of freshly ground black pepper.
TIP Place the walnuts in the air fryer for 1 to 2 minutes at 390°F to get them toasty.
